A Sumptuous Buffet at Spice Brasserie
Executive Chef Robert Chan and his culinary team share their well-wishes at the freshly revamped all-day dining restaurant with the all-new Cured Salmon Yusheng with Five Seafood Treasures featuring crispy Fish Skin, Wakame, Hotate, Tobiko and Jellyfish; inspired by the Chinese idiom “年年有余”, which symbolizes abundance and prosperity. This yu sheng platter, also known as the prosperity toss, is a classic New Year must-have. It will be served to table at the start of your buffet meal when dining at Spice Brasserie.
Weaved into the restaurant’s Asian Street Food favourites in creative and modern interpretations, look forward to a robust line-up of the New Year exclusive dishes like the hearty Dried Oyster Fat Choy Porridge, local favourite Herbal Sea Water Prawns cooked in Cellophane Bag, and the delicious Crispy Pulled Duck Skin with Orange Peel. Enjoy a decadent dessert spread with new creations like Snow Pear White Fungus Raindrop Jelly, Pineapple Tabasco Mousse Cake, alongside Love letters served with “Teppanyaki” ice cream from the dessert station. Exquisite Set Menus at Si Chuan Dou Hua Restaurant
Helmed by Executive Chef Leung Wing Chung at Si Chuan Dou Hua Restaurant, enjoy a heart-warming reunion meal with an exquisite range of sumptuous eight-course Lunar New Year menus to choose from. Taking centre-stage with a traditional preparation method with creative and modern twist, is the debut of an intricate dish that focus on workmanship - Crispy Chicken stuffed with Glutinous Rice, Goose Liver and Waxed Meat (鸳鸯香酥糯米鸡); it is served in both “pi pa” and “rolled” style, and is best complemented with a refreshing and citrusy pineapple sauce as well as a homemade sweet and spicy sauce.
Specially curated for the seafood lovers, the Double-boiled Kampung Chicken Soup with Spiky Sea Cucumber, Conpoy and Winter Melon (玉环柱甫炖日本刺参) offers a hint of umami sweetness from the flavourful broth; while the Braised Four Head Whole Abalone in Golden Chicken Broth (宫廷煨四头鲍鱼宫廷煨四头鲍) is braised for over six hours and dressed with the palatable broth made from chicken and pumpkin sauce.
