Stjärnkocken Mathias Dahlgrens hyllade restaurang Seafood Gastro på Grand Hôtel i Stockholm erbjuder en avsmakningsmeny bestående av akvatiska råvaror som lever i, vid eller på vattnet. Fredagen den 19 april är det premiär för restaurangens gastronomiska fredagsluncher som erbjuder både den fullständiga avsmakningsmenyn samt en selekterad version med en kortare sittningstid.

Great day out on the sea, fishing and getting to know one of our suppliers @bergmansfisk located on the coastline of Gävle. During the day we learned more about small scale sustainable fishing methods and caught herring, perch and salmon.

After we were treated the most amazing lunch spread, fished, prepared and served by @bergmansfisk - smoked and cured salmon, pickled and marinated herring, among other delights!

Here is a recipe for this summer, grilled herring. This simple yet delicious dish was a beautiful end to a day together with one of our suppliers to learn more about their sustainable fishing practices. 

Grilled Herring, 4 people:
1 kg of fresh herring 
Removed, without head, rinsed 

2 dl mild olive oil 
6 cloves Garlic
Grated yellow peel of a lemon 
Parsley

Place oil, lemon zest and garlic in a blender. 
Mix until the garlic breaks. 
Put the fish in a plastic bag, pour in the garlic oil. 
Mixed around. 
Marinate in the fridge for an hour 
Light a charcoal grill. 
Put the herring in a clamp, salt the fish on both sides. 
Grill over the heat for about 2-3 minutes on each side. 

Open the necks and place the fish on a plate and sprinkle with parsley. 

Serve with fresh potatoes and a lemon wedge, enjoy!

For seven generations the Bergman’s family have been fishing in Norrsundet, the coastline of Gävle. Since the end of the 19th century they had their old boathouses within the family. Today they are on a mission to preserve coastal fishing and wild-caught fish, practicing sustainable fishing methods. With fishing boats, boat sheds, a smokehouse, shop, boat berths and a restaurant, they want to make sure their fishing live on for further generations in the Bergman family.
