Mathias Dahlgrens stjärnrestaurang Seafood Gastro på Grand Hôtel har under hösten samarbetat med studenter på kandidatprogrammet Smycke och Corpus: Ädellab på Konstfack i Stockholm. Resultatet är en rad föremål som tagit inspiration från Seafood Gastros råvaror, rätter och serveringssätt. Föremålen kommer att visas upp på Seafood Gastro samt under Stockholm Craft Week.

Mathias Dahlgrens exklusiva restaurang Seafood Gastro på Grand Hôtel Stockholm har idag tilldelats en Michelin-stjärna vid årets ceremoni för nordiska stjärnor. Priset togs emot av kökschef Jonas Hedenqvist under en ceremoni som ägde rum i Helsingfors på den historiska Savoy-teatern. Utmärkelsen är ett bevis på Seafood Gastros exceptionella hantverk och innovation inom gastronomi.

Stjärnkocken Mathias Dahlgrens hyllade restaurang Seafood Gastro på Grand Hôtel i Stockholm erbjuder en avsmakningsmeny bestående av akvatiska råvaror som lever i, vid eller på vattnet. Fredagen den 19 april är det premiär för restaurangens gastronomiska fredagsluncher som erbjuder både den fullständiga avsmakningsmenyn samt en selekterad version med en kortare sittningstid.

Mathias Dahlgren öppnar exklusiva Seafood Gastro på Grand Hôtel

Mathias Dahlgren, stjärnkocken bakom bland annat Matbaren och Rutabaga, öppnar den 11 augusti 2023 dörrarna till det nya restaurangkonceptet Seafood Gastro på Grand Hôtel i Stockholm. Avsmakningsmenyn består av akvatiska råvaror som lever i, vid eller på vattnet. Restaurangen blir en gastronomisk upptäcktsresa för såväl gäst som för Mathias och hans team.

Stockholms restaurangscen får ett nytt tillskott. Rutabaga, som sedan 2017 har skapat vegetariska rätter i världsklass, kommer att växa vidare i nya former utanför Grand Hôtel Stockholm. En ny restaurangsatsning i regi av Mathias Dahlgren tar över Rutabagas forna lokaler efter sommaren.

​Mathias Dahlgren öppnade Matbaren på Grand Hôtel i Stockholm 2007. Vid den tidpunkten var Matbaren en banbrytande restaurang som den svenska matscenen inte tidigare sett. Sedan dess har restaurangen utvecklats med samtiden men meny har haft samma utformning, fram tills nu.

Beaujolais Nouveau est arrivé to Matbaren - this Thursday we will bottle up a wine from producer, Jean Foillard !🍷 Under French law, Beaujolais Nouveau is released on the third Thursday of every November, just weeks after September’s “vendage”, when grapes are harvested. This wine, traditionally a fresh, youthful red, has seen a rise in quality in recent years, and producers like Jean Foillard are leading the charge with their commitment to natural, sustainable practices. Since taking over his family’s vineyard in 1980, Foillard has focused on organic methods, hand-picking only the healthiest grapes, using no pesticides, and avoiding added sulphur. The result is a wine that truly expresses the vibrant, juicy character of the Gamay grape.

We are honored to welcome Wagyu cattle farmer Martin Johansson from @bjursunds_slakteri and @iwagyu_ab . The supply of wagyu is very limited, and only a few animals are butchered annually from his farm. Martin has reserved two animals just for this evening!

Wagyu meat has a special character and taste, thanks to the unique marbling of fat in the muscles. Our menu will include autumn truffles, oysters and of course, world-class Swedish Wagyu.
