Allt vi äter är kemiska substanser
Debattören Mats-Eric Nilsson fortsätter sitt korståg mot livsmedelsindustrin i SvD. Den här gången handlar det om de 2 100 EU-godkända aromämnen som får användas i livsmedel.
Nilsson klagar på att livsmedelsföretagen döljer vilka aromämnen de använder och att de bara behöver skriva ”aromer” i ingrediensförteckningen. Ja, han verkar överhuvudtaget inte gilla användningen av aromämnen, eller kemikalier som han benämner dem. Oklart varför.
Att argumentera för kemikaliefri mat och dryck är ett vanligt retoriskt grepp från livsmedelsindustrins kritiker.
Men vad är mat om inte kemiska substanser? Ett vanligt äpple innehåller exempelvis 14 e-nummer.
Men det är ingenting mot hur många aromämnen det finns i äpplen och annan mat.
Naturliga aromämnen
Med aromämnen menar man definierade kemiska ämnen med bestämda smakegenskaper. Av dem som livsmedelsindustrin använder är många naturliga aromämnen, som extraheras direkt ur exempelvis frukter och bär, eller så kan det vara aromämnen som framställs på kemisk väg, men som är identiskt lika de naturliga ämnena i sin kemiska struktur.
Mats-Eric Nilsson skriver att det behövs att imponerade antal kemikalier för att få ihop till en enda smak, exempelvis 48 stycken för att skapa illusionen av en jordgubbe.
Hur många aromämnen/kemikalier innehåller då en verklig jordgubbe, som gör att den smakar just jordgubbe? Gubbens arom-DNA om du så vill.
Kemiska hemligheter
Ja, det visar sig att verkligheten står sig ganska väl mot jordgubbsillusionen. Aceton, Acetaldehyd, Hexyl acetat, Heptan-2-one, Diethoxymethane, Methoxy-4-vinylphenol, Eugenol är bara några exempel ur den oändligt långa raden av kemiska hemligheter som jordgubben ruvar på. Ämnen som bl a används av företagen för att ge livsmedel jordgubbssmak.
Detta illustrerar väl att allt vi äter är kemiska substanser bara man ger sig tid att analysera det. Och det är alltid kemiska substanser som ger smak och arom.
Skriva ut alla aromämnen i ingrediensförteckningen? Skulle inte tro det.
