Cool tea for the summer - in drinks, starters and desserts

Swedes love flavoured tea; Kobbs Lemon & Lime is one example. With pieces of peel from lemon and lime, the tea tastes like summer and sun. And it is great as a flavour in different drinks and dishes.

Here are three tasty recipes from housewife Lisa to enjoy this summer:

Semi-frozen ice tea drink with Lemon & Lime, spiced with basil
Make your own ice tea; it is good as well as refreshing in the sun. Put the drink in the freezer to get the right icy feeling! 

Ingredients (4 drinks):

  • 4 dl brewed Kobbs Lemon & Lime

Prepare the tea with a tea-strainer, teapot or a capsule

  • 2 table spoons sugar
  • 1 table spoon of your local honey
  • 1 organic lemon
  • 2 organic limes
  • 8 basil leaves
  • 2 cl rum per drink (unless you want to make the drink non-alcoholic)

Directions:

  • Boil water and brew tea with a tea-strainer as usual. Flavour the tea with sugar and honey and then stir. Put the tea in the fridge.
  • Wash all the citrus fruits thoroughly. First, slice 8 slices of one of the limes. Press the juice from the lemon and from half of the other lime. Then, slice the rest of the lime - first in slices and then cut every slice in small triangles. Chop the basil leaves.
  • When the tea is cold, mix it with lemon and lime juice. Pour the tea into nice glasses and then spread the basil and the lime triangles over it. Put the glasses in the freezer for half an hour to get an icy surface.
  • Take out the glasses, pour the rum and crush the ice so that the glass gets a frosty surface. Decorate with slices of lime. Serve the drinks right away.

 

Granita on Lemon & Lime - served with marinated shellfish
A fresh and simple starter for the summer's dinner parties in the sun. Use the shellfish you can get. A dry white wine, like a Chablis or Meursault, is a perfect complement to this starter. If you want to drink a more flowery white wine full of flavour to this starter, add a teaspoon of sugar or honey in the granita.

Ingredients (4 persons):

  • 2 dl brewed Kobbs Lemon & Lime

Prepare the tea with a tea-strainer, teapot or a capsule

  • 1 kilo shrimps or other shellfish
  • 1 bunch of chives
  • 2 organic lemons
  • 1 point of a knife with cayenne pepper
  • 2 table spoons vermouth
  • 1 teaspoon of herb salt
  • Some green vegetable, like ½ cucumber, 1 green apple or 1 avocado
  • Something green to decorate with, like watercress or chickweed
  • White pepper from a mill

Directions:

  • Brew tea on Lemon & Lime as usual. Pour some vermouth in the tea and let it cool in a foil tin.  Flavour with an appropriate amount of salt and white pepper (maybe even some sugar). Put the tin in the freezer for 3-4 hours.
  • Peel the shrimps or the other shellfish.
  • Wash the lemons thoroughly. Grate some lemon peel (just the yellow part). Press the juice from the two lemons.
  • Put the shellfish in the lemon juice together with cayenne pepper and herb salt in a bowl and let it marinate in the fridge.
  • Chop avocado or cucumber into small cubes, chop the chives into fine pieces and mix it all with the shrimps. Dish up in a beautiful stack on a plate. 
  • Scrape out the granita with a spoon and put it next to the shellfish. Decorate with water cress or chickweed. Pepper.

 

An egged milk chocolate ice cream on Lemon & Lime
A soft and creamy ice cream based on an egg cream. Kobbs Lemon & Lime gives a delicious, acidulous edge to the sweet milk chocolate.

Ingredients (4 persons):

  • 2 egg yolks
  • 1 dl organic cream
  • 1 dl unhomogenized milk
  • 150 g milk chocolate
  • 1 table spoon Kobbs Lemon & Lime

Directions:

  • Begin 8 hours before serving.
  • Simmer egg yolks, cream and milk on medium heat till the mix starts bubbling, then remove it from the stove and let it cool.
  • Melt the chocolate in a water-bath, let it cool.
  • Boil 1 dl water and put in a tea-strainer with tea. Let it draw for about 5 minutes for an intense flavour.
  • Mix the melted chocolate and the tea with the cream when it has cooled.
  • Put it in the freezer for 5 hours; stir the cream once or twice during this time.
  • Take out the ice cream 10 minutes before serving, Hold two spoons under pouring hot water; then form eggs of the ice cream and put them on a plate.
  • Serve with fresh seasonal berries.

 

Kobbs Lemon & Lime
Kobbs Lemon & Lime is a black tea with a fresh and brisk taste of lemon and lime. The tea contains pieces of peel from lemon and lime, and it also tastes great as ice tea. It can be bought as loose tea and as capsules. The capsules are from Caffitaly System, an international system.
