The soup has a little secret: its creamy texture! The secret ingredient for the creaminess is organic coconut milk. And when combined with KoRo’s pumpkin pie spice mix, it's super easy to whip up a pumpkin spice latte that’ll make every autumn day feel like a movie.
Here is KoRo’s recipe for a pumpkin spice latte:
Ingredients:
- 1 cup of freshly brewed espresso or organic coffee
- 1/2 cup of milk (whole milk, skim milk, or a dairy-free alternative like almond or barista oat milk)
- 2 tablespoons of canned pumpkin purée
- 2 tablespoons of a preferred sweetener (e.g. organic maple syrup)
- 1/4 teaspoon of pumpkin spice mix
- Whipped cream (optional)
- Ground cinnamon or nutmeg for garnish (optional)
Instructions:
- Brew coffee/ espresso:
Set it aside in a large mug.
- Heat milk and pumpkin purée;
In a saucepan over medium heat, combine the milk and the pumpkin purée.
Stir until the mixture is hot, but don’t let it boil.
- Add sweetener and spices:
Stir in the sweetener and the pumpkin spice mix. Adjust the sweetness and spice level to the preferred taste. Continue to heat and stir until the mixture is well-blended.
- Combine coffee and pumpkin mixture:
Pour the brewed coffee or espresso into your mug. Then, slowly pour the pumpkin milk mixture over the coffee. Stir gently to combine.
- Optional toppings:
Depending on taste, the pumpkin spice latte can be topped with whipped cream and a sprinkle of ground cinnamon or nutmeg for extra flavour or show off.
- Serve hot and enjoy!
