A colourful way to warm up on rainy days: KoRo’s organic pumpkin and coconut soup is not only about keeping cosy during those rainy autumn days, but its orange colour is also an absolute mood lifter! The soup has a little secret: its creamy texture! The secret ingredient for the creaminess is organic coconut milk. It gives a smoothness to the soup without overshadowing the pumpkin’s delicate taste. Made from Hokkaido pumpkin, coconut milk, carrots, a dash of orange juice and ginger makes KoRo’s pumpkin soup a must-try for autumn comfort.

P is for pumpkin and pasta: KoRo’s organic pumpkin and apple tortelloni is on hand to satisfy any pasta cravings with a seasonal twist. Here is KoRo’s recipe for a pumpkin spice latte:

  • Brew coffee/ espresso:

Set it aside in a large mug.

  • Heat milk and pumpkin purée;

In a saucepan over medium heat, combine the milk and the pumpkin purée.

Stir until the mixture is hot, but don’t let it boil.

  • Add sweetener and spices:

Stir in the sweetener and the pumpkin spice mix. Adjust the sweetness and spice level to the preferred taste. Continue to heat and stir until the mixture is well-blended.

  • Combine coffee and pumpkin mixture:

Pour the brewed coffee or espresso into your mug. Then, slowly pour the pumpkin milk mixture over the coffee. Stir gently to combine.

  • Optional toppings:

Depending on taste, the pumpkin spice latte can be topped with whipped cream and a sprinkle of ground cinnamon or nutmeg for extra flavour or show off.

  • Serve hot and enjoy!
