Chr. Hansen launches new yoghurt culture especially for the Middle Eastern market

The new YF-M830 culture not only offers dairies a high quality throughout shelf life but is even likely to prolong it.

“The new culture is a good solution for producers of healthy and tasty yoghurts who want to offer consumers great texture and flavor. In addition to providing a fast acidification, YF-M830 has a low post acidification, which ensures good taste and high quality throughout shelf life, potentially even increasing shelf life,” explains Jogvan Houmann, who is Business Manager for dairy at global natural ingredients producer Chr. Hansen.



Part of the DVS family

The new DVS (Direct Vat Set) culture is to replace the traditional bulk starter and improve quality of the final yoghurt. Added directly to the process milk it provides consistent quality and control, resulting in less scrap and low cost in use. The yoghurt producer can focus on his core competence, producing the end product and not the starter culture.

Moreover it comes in a convenient 1000U packing and as a freeze-dried culture, which makes it easy to use and not least transport and store in the warm region.

Consumer focus

When developing the new culture the end-user was very much in focus. Taste, mouthfeel and the consumers’ wish for a healthy lifestyle were important elements to be taken into consideration.

“The new culture solution gives a thick and creamy texture offering the possibility to decrease fat content whilst maintaining texture. Secondly it brings a characteristic yoghurt flavor, which is what the local taste calls for,” concludes Jogvan Houmann.

Growth opportunities

Yoghurt consumption is on the rise on the Middle Eastern market. As 10-15% of the world’s yoghurt production takes place in the Middle East this region offers promising growth opportunities for Chr. Hansen’s DVS concept.
