Introducing our Head Chef Jakob Levén whom together with his kitchen team ensures you have an excellent experience in the Dining Room.

When did your interest for gastronomy begin?

- My father's food has always been the biggest inspiration to me, well-prepared food that warms your soul. As an 18-year old in 1996 I started working at Lisa Elmqvist's at Östermalms food hall where my interest for cooking flourished. After Lisa's I have been a chef at Gyldene Freden, Hotel du Vin in England and worked many seaons on Gotland. I started at Lydmar back in 2013 and have worked my way up to Head Chef.

What kind of gastronomy do you find at Lydmar?

- A modern Eurpoean kitchen with influences from the south of Europe and Asia. You will find everything from Tuna tartar Nikkei style to Moules frites the authentic French way.

What are the biggest challenges in keeping delivering a high level prodcut every day?

- To always be on your toes and to ensure that everyday get top quality products delivered. I am very humble towards all groceries and try to show respect, take care of and refine all ingredients when componing the menu every day.

Best dish on the menu right now?

- The Halibut! Mainly because it is within the season and the flavours are exactly where they are supposed to be. However today Wild duck will be up on the menu and it might beat the halibut. It is going to be magic..

If you were only allowed to eat one dish for the rest of your life, what would it be?

- My fathers tenderloin with Dijon mustard and garlic sacue served with hasselback potato. It takes me back to my childhood...

Character No 1 by Azzi Glasser

From the moment you walk through our doors you will feel a scent of pepper together with nectarine that creates a delicate freshness. The base in the scent comes from moss which is deepened with tones of leather and suede. We call it Character No 1 - our bespoke scent created by famous Londoner perfumer Azzi Glasser. You find them in all our bathroom amenities together with diffused fragrance sticks. Oh, and all can be purchased in our gift shop, exclusively for guests at Lydmar Hotel  in addition with some of her perfumes such as Mr Vetivert, After Hours & Sequoia Wood!
