Beaujolais Nouveau - with Chr. Hansen wine cultures
Viniflora LS is a natural wine concept from Chr. Hansen, which offers a reliable and safe fermentation for quality wines.
This season, 50 million bottles of Beaujolais Primeur have taken off with Viniflora LS and will be ready for consumers all over the world on the launch date, November 15.
The Beaujolais producers work with a very tight deadline with no room for uncertainties in the production. Natural malolactic fermentations are unpredictable, risky and time-consuming, as they tend to rely on the presence of the right bacteria in high numbers.
“The wine industry has not traditionally controlled the microflora in wine production, which not only results in unpredictably long fermentation times, but also wines of inferior quality, due to risk of uncontrolled spoilage microorganisms. Viniflora LS is a natural easy-to use bacteria solution that enables the winemakers to control the malolactic fermentation process, thereby avoiding fermentation problems and resulting off-flavors," says Sarita Bairoliya, Marketing Manager, Wine Cultures, Chr. Hansen
Control and consistency
Chr. Hansen helps wineries throughout the world understand the implications of various microflora in winemaking, and the benefits that can be achieved by using quality starter cultures. Viniflora LS is frozen natural bacteria, which controls malolactic fermentation. The malolactic fermentation process ensures a soft and round wine and is very important for making tasty wines.
“Our customers are very satisfied with the performance and quality they get from using our cultures in their Beaujolais wines. One quality-oriented customer alone bottles 10 million bottles of Beaujolais wine using our cultures,” explains Nicolas Prost, Commercial Oenologist Technical Sales, South Europe, Chr. Hansen.
